Recipe Review - Lazy Day Salsa

This recipe was VERY good. My husband loves "watery" salsa, while I like chunky, more like pico de gallo. This satisfied both of us and was super easy to make.

This recipe is made with Cilantro (Coriandrum sativum) - is a common herb that you will also find in many recipes from the Mediterranean, to India, to Mexico. Something that I learned while researching the benefits of cilantro is the leaves and stems are the cilantro while the seeds are considered coriander. Cilantro contains vitamin A, vitamin K, folate, potassium, vitamin C, calcium, magnesium, phosphorus, and potassium. (source) Through my herbal studies I have learned Cilantro has been known to help lower cholesterol, reduce mouth ulcers, reduce heavy metals in the body, is an antioxidant, helps reduce allergies, helps maintain blood pressure, reduces anxiety, improves sleep, aids in digestion while reducing risk of food poisoning, protects the heart, reduces blood sugar levels, reduces PMS and menstrual issues, preserves vision, relieves pain and inflammation, protects against colon cancer, prevent bladder infections and so much more. An excellent herb to add to your herb garden.

Lazy Day Salsa


  • 1/4 medium white onion, peeled

  • 2 tablespoons diced jalapenos (from a can) OR 1 medium fresh jalapeno, stem removed and halved

  • 2 cloves garlic, peeled

  • 1 (14.5 ounce) can Hunt's fire roasted diced tomatoes with garlic

  • 1/2 fresh lime, juiced

  • 1/2 teaspoon kosher salt

  • 2 tablespoons fresh cilantro


  1. ​Add onion, jalapeno and garlic to the bowl of a food processor. Pulse until the bits are your desired size, about 5 or 6 times. Open cover, scrape down sides. Add remaining ingredients, pulse 1 or 2 times to combine.

  2. Transfer to a serving dish and serve immediately or transfer to a pint jar and store in the refrigerator. It becomes even more flavorful the next day.

  3. Enjoy!


2 HUGE thumbs up. It was very good. Excellent actually, you don't need to change a thing. I have made this a few times, the first roasted dices tomatoes with garlic are very hard to find in our area.

Things I may/did change:

  • I used a whole small/medium onion. I love onion and it is so beneficial to the body too.

  • I reduced my jalapenos. I don't love spicy and with children they don't either.

  • Because the fire roasted tomatoes are so hard to find, I switched to Rotel Mexican Style Lime and Cilantro diced tomatoes. It will just add more cilantro and lime juice to the recipe and has some heat as well.
